Today I want to teach you a very famous Italian recipe that everyone knows all over the world. I’m talking about “Carbonara” 🍝
- 320 g spaghetti
- 120g cheek lard
- 30g pecorino cheese
- 20g parmisan cheese
- 4 yolks
- Black pepper
Time to start!
First you need put a pot full of water on the stove. When the pot is on the stove you can make the carbonara sauce. Don’t worry it’s super easy.
First of all you have to cut the cheek lard in small pieces, put them in a pan without oil and cook the cheek lard over low heat. The small pieces have to become crisp but not burned (more or less you need 7 minutes).
Now it’s time to mix the 4 yolks with pecorino cheese, parmisan cheese, a bit of salt and a bit of black pepper. Remember the pot full of water? To make the sauce perfect you have to add a small cup of hot water in the mixture of eggs and cheeses, bleeding rapidly. Mix them until the consistency is smooth. Pay attention, the yolks must not be cooked.
When the water boils put a bit of salt in it together with the spaghetti. Cook spaghetti firm to the bite. When they are ready but them in the pan with the crisp cheek lard pieces, then put everything in the bowl with the mixture of eggs and cheeses and mix all the ingredients together.
