Today I want to teach you how to cook “gnocchi al pomodoro”. It’s a delicious pasta dish that satisfies everyone’s taste 😋
- 800g potatoes
- 200/220g flour
- 1 egg
- 1 onion
- Tomato puree
- Basil leaves
- Extra-virgin olive oil
- Parmesan cheese
First you need to prepare the tomato sauce. Don’t worry it’s super easy. You have to chop an onion and fry it in a pan with a bit of oil. When the onion start to change its colour mix the tomato puree and cook the sauce for 15 minutes. Check the seasoning and add some basil leaves. The tomato sauce is ready! 🍅🍅
Now it’s time to prepare the dough. You have to boil the potatoes with the skin in a pot full of water until they become soft (more or less 30/40 mins, it’s depending on how big are the potatoes). When the potatoes are cooked you have to drain them and remove the skin. The next step is to put a bit of flour in an empty surface and squash boiled potatoes on top of it with a potato masher. Before mixing all the ingredients together, you have to put the remaining flour, one egg and a bit of salt together. Mix them until the consistency is smooth; the dough have to be soft but not so much so it doesn’t need to be knead for a long time (maximum 5 minutes).
After that, you have to divide the dough in different parts and roll each piece in order to create rolls. Cut the rolls in small square and make an etching on them with a fork. Pay attention, the gnocchi dough is very delicate so you don’t have to squeeze it too much when you make the etching.
Are you ready to cook your gnocchi? Put a pot full of water, with a spoon of oil, in the stove. When the water boils put a bit of salt and the gnocchi too. Wait until the gnocchi come to the surface, that means they are ready (more or less 3 minutes) and then put them in the tomato sauce.
Serve the gnocchi with the tomato sauce with parmesan cheese (you can put also mozzarella cube, if you like it) and enjoy your gnocchi. 🍽️
